Vegan sausages (gluten free)
Makes 8 sausages
160 ml vegetable stock
1 can cannelloni beans, drained very well
2 Tbsp nutritional yeast
2 Tbsp soy sauce
1 Tbsp fennel seeds (I tend to be slightly generous here)
2 tsp olive oil
2 Tbsp minced shallots
2 tsp salt
1 garlic clove, minced
1 tsp smoked paprika
1 tsp freshly ground black pepper
240 g rice flour (approx)
Using a food processor, add all except the rice flour, and pulse a few times then puree completely. Once pureed, add a cup of rice flour, pulse to combine, then add a bit more and a bit more, using the machine to incorporate it fully each time. There will be a point where the mixture begins to clump and then pull away from the sides of the bowl. You're getting close now. Run the machine a bit more, allowing the mixture to incorporate more.
Stop the machine, and check for stickiness. You have added enough rice flour when the mixture is easy to handle. If it's too sticky add more flour, and if it's too dry add more stock. Pulse to combine after each addition. The first time you make this, you won't be sure quite what you're looking for. Real sausages are a bit sticky, too, to be honest, so you're looking for a firm-ish dough.
Remove the dough from the food processor. Cut into 8 portions and roll each section into a small sausage-shaped log. Measure 8 pieces of tin foil and 8 smaller pieces parchment paper to wrap around each sausage (parchment paper first; then foil around). Seal the ends well will a twist.
Bring a pan of water to the boil, and simmer the wrapped sausages for 15 minutes. Use tongs to remove the packages to a rimmed baking dish and allow them to cool fully before storing them in the fridge.
To cook: pre-heat a skillet with oil on high (just before smoke point) and add the sausages. Turn periodically to get even browning on all side. These can be used as in recipe that calls for sausages. I've popped them into my cauliflower gratin, and I've also used them with seared broccolini on pizza. They are hearty and quick to heat. Even a sausage sandwich gets thumbs up in our household now.
