A green salad to start
This is so simple and so rewarding. You'll need a mandolin for shaving the fennel and radish.
Serves 2 as a main or 4 people as a side salad
1 bunch Tuscan/lacinato kale, stems removed, leaves sliced into 2 cm strips
juice of a lemon
1/2 fennel bulb, shaved on mandolin to 1 mm thick
1 bunch radishes, shaved on mandolin to 1 mm thick
freshly ground black pepper
In the serving bowl, rub the kale leaves with the salt until the kale has noticeably softened. Set aside. Have the lemon juice ready in a smaller bowl, and as the fennel is shaved, toss it in the bowl with the lemon juice to prevent browning. Combine everything in the serving bowl and drizzle with a small amount of olive oil. Toss well.
